This past May, a few friends and I went to the Brimfield Antique Show. If you haven't heard of it, it's a huge outdoor antique and collectibles show in Brimfield, Massachusetts. There are lots of really cool vendors spread out over miles of fields, selling little trinkets to huge furniture pieces. Plus, there is a bunch of delicious local food!

Our first morning at the show, we wanted to fuel up before walking around. So, we found a little iced coffee stand, and Pilgrim Sandwich, which had amazing breakfast wraps. The stand had a very simple menu of only five options. Every ingredient was fresh and the wraps were made on the grill right in front. (The guy running the stand even gave our dog, Spock, a cup of shredded chicken for a treat. Spock was very happy!)  Check out my recipe below.

Breakfast Wraps

  1. Heat 1 tsp. of butter, add 8 scrambled eggs, and cook on low heat.
  2. Add a can of rinsed black beans
  3. Dice 2 peppers and scallions, add to the mixture.
  4. Remove from heat and scoop about 1/4 of the mixture onto a tortilla.
  5. Top with shredded cheese
  6. Roll up torilla and wrap with parchment paper
  7. Repeat 4-6 until with the remaining egg mixture.

4 wheat or flour tortillas

8 eggs

1 can back beans

2 peppers

Fresh copped scallions

Shredded cheddar cheese

Hot sauce (optional)

For the next couple hours, we walked around the grounds and found lots of awesome goodies. There was a women selling all types of patterned fabrics, a man selling homemade furniture from wood he found around abandoned farms, and a couple selling marquee signs. After some shopping, we scoped out an apple cider donut stand. They were still warm and very delicious! Check out my recipe below.
